Leap of Faith



I've always dreamed of being my own boss, living life on my terms and making my own mark in this world. I've wondered what it would be like to find something that inspires you to the point that you can't stop thinking about it and you NEED to do something about it. One small problem I never found anything I was that passionate about, that was until I became vegan. That may sound strange, but non the less it's true. I immediately fell in love with this lifestyle and more so as time went on. I truly feel I am meant to live this way. Nothing has ever felt more natural to me. 

Another thing I've become passionate about on this journey is limiting the number of chemicals we are using. I've become obsessive when it comes to reading product labels and I couldn't believe how many chemicals were in our everyday items. This is what led to me creating my own products. I've made my own sugar scrubs, beard balm, body whips and bath salts to name a few. I've had a few friends and family try them out and the feed back was amazing. Everyone raved about them. Their excitement made me excited. Then I had a thought that there might be something here. This could be something that not only I enjoy, but could make a career out of. It's creative which I love and it's vegan which I love!! Then one evening when I was making a sugar scrub my husband suggested that I turn this into more than a hobby. Little did he know that the little push I needed.

So today I got my business license and Handmade with Love by Kathleen was created. I have never felt more inspired, excited, anxious, nervous, creative, passionate and confident in all of my life. I know this will not be easy, but I also know it's not impossible. I'm willing to do the work to make myself successful. I'm going to be starting off small. I will still be working at my current job until I can focus solely on my business. Fortunately I only currently work part time so I will have plenty of free time to focus on building my business. I will be selling organic sugar scrubs, bath salts, lotion bars, room sprays etc. All of my products are handmade, natural, vegan and cruelty free. 

My plan is to set up a store on Etsy within the next month or two. I would also like to do a few local farmers markets to promote myself in my area. I am ready for this next chapter in my life and I am thankful to everyone who has supported me and given me words of encouragement. I am taking a leap of faith on myself and appreciate the love! If you are dreaming of starting a new chapter in your life I encourage you. Just believe in yourself and have faith. Now it's time to set more goals and demolish them! Stay tuned!! 💚

Roasted Veggie Bowls

Sorry I haven't really been blogging everyday. I'm starting a new adventure and have been very busy. I can't wait until I can share the news with you! In the mean time I hope you enjoy this recipe. I made this for dinner last week. I just love roasted veggies and dinners that come together fast. 

Roasted Veggie Quinoa and Brown Rice Bowls

Ingredients 
1 large red bell pepper. Seeds and ribs removed. 
1 head of cauliflower
1 large bunch of asparagus (snap off tough ends)
3-4 large carrots peeled 
1 box organic brown rice and quinoa 
(You can also sub just rice, just quinoa or use cous cous)
Olive oil
Salt 
Pepper
Nutritional yeast
Garlic powder


Directions 
Preheat oven to 425 degrees Fahrenheit 
Prepare all veggies by chopping them into large bite size pieces.


On a large baking sheet toss the veggies with a few splashes of olive oil, salt, pepper, nutritional yeast and garlic powder. 


Once you have seasoned to your taste place in the oven. Roast veggies for 15 minute, flip then roast for another 10-15 minutes. 



While your veggies are roasting prepare the rice and quinoa according to the package. Once everything is done place some of the rice and quinoa in the bottom of a bowl and top with your veggies. That's it! 


Such a delicious meal with minimal effort. Perfect for busy days. I hope you enjoy!'

Chocolate Peanut Butter Energy Balls

Vegan and Gluten Free



Ingredients:
15 Organic Medjool Dates pitted & halved 
3/4 Cup Gluten Free Non-GMO Oats
1/4 Cup Organic Cocoa or Cacoa Powder
1/2 Cup Non-GMO Walnuts
1/2 Cup Organic Dark Chocolate
1/2 Cup Shredded Organic Coconut
1/2 Cup Natural Peanut Butter 

Directions:
Combine all ingredients in a food processor. Pulse until you have a thick paste. Be sure to scrape down the sides in between pulsing to make sure you have an even mixture. Once you achieve the desired consistency use a mini ice cream scoop or tablespoon to scoop out mixture. Roll into balls. Chill for at least 15-20 minutes on a baking sheet before transferring into an airtight container. You can store them up to two weeks as long as you refrigerate them, but they never last that long in our house. I hope you enjoy these. They are great for snacking in between meals or taking with you on the go for a fast and healthy meal.
Makes 36 Balls.

My Favorite Things: Cleaning Supplies


In this weeks "Favorite Things" it's all about cleaning products. For years I tried different types of "Natural" cleaners and it didn't matter they always made me feel like I could not breathe. Cleaning is never fun, but it's miserable when you feel like you're dying while your cleaning. My body just HATES chemicals. There were times where I could feel my lungs and chest tightening up. It would take at least a day for me to feel normal again. However since going vegan and switching to vegan friendly products I haven't had that problem. All of the products I use are incredibly affordable. You can find all of these at Target. One way to save money is to buy multi surface cleaners that way you don't have a ton of different cleaners for each room which of course will add up at checkout. 

#1 is my all time favorite dish soap 
Seventh Generation is my favorite brand. I love the scent and how well it cleans my dishes. I also love that a little soap goes a long way so I don't feel like I'm wasting any. In the past some dish soaps I would be constantly adding more to my sponge and it just felt wasteful. I truly feel I get my money's worth. The Lavender Floral and Mint is my fave. 

#2 is my favorite household cleaner 
Mrs. Meyer's Clean Day Lavender Scent in their multi-surface everyday cleaner is my go to household cleaner. I'm pretty sure I've used it on every inch of my house. 

#3 is my favorite laundry soap
Seventh Generation Natural Laundry Detergent of course in their Lavender and Blue Eucalyptus Scent. Can you tell I like Lavender?! Just like their dish soap I love the scent, how well it cleans and how a little soap goes a long way. 

Of course I also love that these products are vegan and cruelty free. I truly love everything about the vegan lifestyle. I honestly only wish I decided to do this sooner. I hope you'll try one or all of these products and see that you can have quality cleaning products without harming animals or going broke.

My Favorite Things: New Faves

This weeks favorite things are some new products I've recently tried. I'm always looking for new vegan products to love. Here are three of my newest faves!


The Kiss lip gloss by Lush Cosmetics the best lip gloss I've ever tried. I think one of the reasons I love it so much is that it feels more like a chapstick than a sticky gloss. I also love that it has a slight tint to it because I don't like to wear lipstick and most other make up products, but I love that this gives me a little bit of color. It also leaves my lips smooth and hydrated which has been great for the cold winter weather in NY. 

Lush is a great company. They make their products by hand and they have tons of vegan products. They have also been against animal testing for 30 years and continue to be a major force in fighting animal testing in the cosmetics industry. I can't believe I didn't even know of this company until a good friend of mine gave me a gift card for Christmas. So happy I know of them now. I've also tried other products from this company: bath bombs, soap, facial cleanser and face/body masks. I have yet to be disappointed. Head over to their website today and check them out!!

Next is probably one of my all time favorite companies. Timeless Organics Skin Care. This is another company that up until this year I had no idea about. Thanks to social media I was able to discover them. I love everything that I have tried so far from from this company. One of my newest faves is the Citrus and Matcha "Morning Blast" Scrub. I just tried this product this morning and HAD to include it in today's favorite things. The scent is lovely and it's perfect for your morning routine. The citrus and Matcha scents help to wake up the senses and the pink Himalayan salt helps to exfoliate your skin leaving you smooth and glowing. Not a bad way to start your day at all! 


Lastly is a company called Acure Organics. I recently came across their products in our local health food store Mother Earth Storehouse. I bought the straightening shampoo and conditioner. I love the way it leaves my hair feeling light in weight, but full in volume and body. Lately it seemed like my hair was feeling weighed down however since switching to this shampoo I don't feel that way. I also love the scents of pomegranate and coconut. It's like an island getaway for your hair. I'm looking forward to trying other products from this company. Great quality products that are vegan and cruelty free really do exist!! You do not have to sacrifice anything with these products. And the best part is no animals were sacrificed.

Let's Talk About Eggs Baby

Don't mind me and my corny title. And yes I'm singing that in my head. Anyways before we get sidetracked lets get on to the point of this post.

I've always loved baking. It's been a love of mine as far back as I can remember. Some people find baking stressful, but for me it has always been relaxing. After going Vegan I knew I needed to figure out how I was going to make my favorite baked goods if I couldn't use eggs. During my first year into this journey I have tried lots of recipes and different way of substituting eggs in recipes. Some of my favorite go-to egg replacements are: bananas, apple sauce and the corn starch/water method. 2tbs of cornstarch mixed with 3tbs water equals one egg. I use this method when making pumpkin pie because it doesn't have any flavor so the pumpkin pie tasted just like pumpkin pie. I've been interested in trying the flax egg and I've bought flax meal in hopes of trying that out in recipes soon. Here is a chart that I saved soon after going vegan. I've had it saved for so long that I honestly don't remember where I found it.



After baking without eggs for over a year, when I see eggs in recipes now I always think how unnecessary. Not to mention unhealthy. I'm telling you, you do NOT need eggs to make your baked goods moist and delicious! And you do NOT have to be vegan to bake without eggs. Try incorporating some of these methods into your baked goods and you too will see that we do not need to consume eggs. For savory dishes like scrambles and mock egg salad we like to use tofu. Seriously a game changer if you enjoyed these dishes before becoming vegan. 

Just like factory and dairy farming I have learned a lot about the egg industry. Basically I was just as horrified and saddened as I was about factory/dairy farming. I don't want to get into the gruesome details on here. Gluten Free Vegan Cranberry Walnut Energy Balls

Lately I have been feeling as though we need to get into healthier habits. You know less processed foods and more fruits, veggies and other wholesome foods. This is my take on an energy ball. It's full of my favorite ingredients. These are great to make anytime, but I like to make things like this before the week starts so we can eat them during the week when we may be busy or need something on the go. I hope you enjoy this recipe.

Gluten Free Vegan Cranberry Walnut Energy Balls



1/2 Cup Organic dried Cranberries (I used cranberries sweetened with apple juice)
8 Organic dates rolled in coconut (you can use plain dates as well)
2/3 Cup Organic sweetened shredded coconut
1/2 Cup Organic dark chocolate chips 
1/2 Cup Gluten free rolled oats (Non-GMO)
1 Cup Natural Peanut Butter
1/2 Cup Chopped walnuts (Non-GMO)

Makes 36 Balls 

Add all of the ingredients into your food processor and pulse until you have what looks like a thick paste. You will want to stop and scrape the mixture down to ensure you have an even consistency. Once you have the texture you want you can scoop the mixture out and roll it into balls, I like to use a small ice cream scooper so they come out the same size. I like to place the balls on a baking sheet. You can line with parchment paper if you want. Then chill the energy balls for 20 minutes in the fridge before transferring to a container. I find they stick together less when I allow them to chill first. You can store these in an airtight container in your refrigerator for up to two weeks. If your house is anything like mine though, these won't even last a week. I hope you enjoy!!

Losing a Piece of My Heart

I remember this day last year so vividly. Not even like it was yesterday, but as if it were happening right now all over again. I remember my husband waking me up and feeling like I was dreaming because he should have been at work. Soon as he spoke I went from dreaming to nightmare. All he said as he choked on tears was "Your dad passed away". Those words felt like someone was trying to rip my heart out. Then I felt as though all of the air had been knocked out of me and I know that was one of the hardest things my husband ever had to do. 

There's no true way to describe it. I wouldn't wish it on anyone. Feeling as though I was in a haze I picked up my phone and I text a good friend of mine who I happen to work with. Still not sure why I did that. Not that it was weird that I would tell her or anything, but maybe I needed to say it, but without saying it out loud you know to see if it was real. It still didn't feel real. She frantically text me back and all I could say was I don't know. I then called my best friend. Someone who I've been friends with since I was 5 years old, my soul sister someone who knew my family as well as her own. Again all I could say was I don't know. She was as stunned as I was. I told her I would keep her posted and hung up. I kept calling my mom, but she wouldn't answer. I was getting angry. Finally someone picked up. I heard my brothers voice and I lost it. 

I think it was too much for my mom to even tell my sister and she just couldn't say the words again to her other children. My brothers girlfriend broke the news to him as my husband did to me. After I hung up with my brother I screamed out loud. Just a scream. Then I fell into my husbands arms and sobbed for what felt like hours, but was actually only minutes. I had to get dressed. I had to get to my moms house. The whole half an hour ride to my moms I was still feeling numb. I just stared out the window into the cold gray sky and thinking how fitting that sky was. That car ride felt like hours. I walked into my moms and she was right at the door. She hugged me and through so many tears she said she was sorry, but I couldn't allow myself to feel. Not now. I don't want to feel this. Stay numb I thought to myself. I now understand why our bodies go into shock first.

That day was long. The longest day I have ever endured. When I say that day felt like it took weeks to get through I am not exaggerating. On our way home that night I listened to a voicemail that was still on my phone from my dad. I completely flipped out. The rest of the ride home my husband listened to me sob loudly and uncontrollably. I'm pretty sure I was yelling too. I know that was extremely hard for him, but he let me do what I had to do. No judgements. I was a complete mess, but he didn't judge me. Through all of this he just continues to love me. I am so thankful for him. He is my rock and a huge part of why I was able to get through this year. There are no amount of words for how much I love him and how lucky I am to have him.

Now my dad was living in Ohio when he passed away. He had moved there in 2012 when the company he worked for transferred him there because they left our area. My mother and father separated when I was 17 and later divorced. I honestly think it's what helped them to remain somewhat close ever since. They honestly cared about each other and loved each other. I think they just knew they weren't the best together. It was nice for my siblings and I that we could do things together. I know it seems strange to some because that's usually not the case with divorced couples. We were lucky. I know this year has been incredibly hard on her as well.

When my parents found out they were expecting me my dad bought a giant stuffed teddy bear for me that naturally I named big bear. He was currently in a storage container on our porch. When we finally got home I stomped onto that porch, swiped my hand across the top of the container sending a glass candler holder and other items crashing to the floor, I grabbed my stuffed animal and stormed into the house. I felt like it was the only part of him that I had left. My husband sweetly suggested that I wash it immediately. It was kinda musty from being stored away all these years. I washed it then went to bed. The day from Hell was over.

The next day and days to come I cried ALL of the time. I had heard my mom once say that emotional exhaustion far outweighs physical exhaustion and she couldn't have been more right about that. I'm grateful for my family and friends that have been there through the hardest time of my families life . Grief is not something you get over and there is no finish line. It is something you are left with and you just ride the waves. Some days the waters are calm and other days the waves come crashing and you feel like you're drowning. All you can do is hold on. I am telling you from experience the storm will pass even if only for a short time. They say you have to endure the rain in order to enjoy the rainbow. I know that sounds strange to think of happiness after a loss like that, but no matter how much you try to avoid it, life does go on and you have to go on too. Somewhere in between the shock, anger, sadness, endless grieving and all of the tears; there will be happiness again. It may never feel the same again, but it will come again. 

My dad passed away March 5th 2015 suddenly from natural causes. He was 50 years old and his
body just gave out from a lifetime of unhealthy choices. He had heart problems among other health
issues and that ultimately led to his passing at such an early age. My dad had come up to visit the 
January before he passed away. I told him all about my husband and I going Vegan and he was so
happy for us. He said I never looked healthier or happier. He was very interested in learning all about
what being Vegan meant. As we talked he kept saying I want to be Vegan. Sadly my dad passed before he could give Veganism a try. I truly believe he was sincere in wanting to try it out. He knew he needed to do something about his health. My brother and his girlfriend had just given birth to a beautiful baby girl in August. She was my dads first grandchild and I know my dad wanted to be around for her and of course for us. This past year has been a lot. Emotionally and physically draining. I've had good days. I've had bad days and I've had days that I could hardly bare. It's such a strange feeling to lose someone who helped to give you life. I'm learning through this journey that losing someone you love isn't the hardest part. It's living without them.

At first I wasn't sure if I wanted to share this on my blog, but my blog is about my life as well as being a Vegan. There was no way I could just act as though everything is perfect especially on this day. This day honestly sucks. I could not go through today and not acknowledge my dad. I also felt that leaving this out would be hiding a part of myself and I don't want to do that. I am not looking for sympathy I just wanted to be sincere about who I am and my life. My heart goes out to anyone who has lost someone they love.

This photo was taken the last time I would ever see my dad, hug him and tell him I love him. My husband just happened to run into him at our local supermarket a few days before hand. He told him when I was off.
He came to my house on a snowy Tuesday and surprised me. If my husband hadn't told him when I was off then I would never have had this last day with him. I am forever grateful for that day.


Rest in Paradise Dad. You are loved beyond words and missed every single day,  the day you left you took a piece of us with you. ❤️  September 1,1964-March 5, 2015.

Top 10 Fast Faves

When we hear the term Fast Food we immediately think of drive thru's, unhealthy food or junk food. So I'm sharing with you my Top 10 Fast Faves. These are my go-to "Fast Foods" that do not require a drive thru or a guilty conscious afterward.


Number 1: Bananas
I love bananas. They have always been one of my favorite fruits. Contrary to what you may have heard bananas are not bad for you and they are not going to make you fat. In fact consuming bananas on a daily basis is s great way to boost your metabolism. Bananas are a fast way to help with your hunger and they are great to take with you when you're on the go.

Number 2: Larabars 
I discovered Larabars after I became Vegan and I wish I knew about them sooner. They are delicious and filling. I always try to carry one in my purse so if hunger hits me and there are no Vegan options
available I am prepared. They have so many incredible flavors. Some of our faves are the Blueberry 
Muffin and Peanut Butter Chocolate Chip which are pictured above. We also love the Coconut Chocolate Chip, Peanut Butter Cookie and Chocolate Chip Cookie Dough Flavors. Honestly I don't think I've tried a Larabar I didn't like. I also love that they are Non-GMO and made of 100% Real Food. If you can't find them in your local supermarket (Check by the Power Bars) they do have a website. They do offer other products as well, but not all are Vegan so be sure to read the ingredients. 
Number 3: Nuts
Nuts are a great go to when you're on the run or looking for something to hold you over between meals. Almonds, Walnuts, Cashews and Peanuts are my favorites. Try separating out some portions into containers so in a hurry you can just grab and go. 

Number 4: Juice Smoothies
I love these Naked  100% Juice Smoothies. They are great for busy days and they taste delicious. I love to make smoothies at home, but when you don't have the time to make it yourself these can be a great alternative. The Green Machine is my favorite from the Naked brand. I have also enjoyed the Bolthouse Farms Green Goodness juice, but I wish they were Non-GMO. I try to avoid GMO's whenever possible.

Number 5: Trail Mix 
I've always liked trail mix. It's great for snacking or when you need something to hold you over in between meals. Just make sure that if there is chocolate in the trail mix that it does not contain milk. I've never seen a trail mix that contains honey, but I would also check for that. It's easy to find Vegan trail mix. Definitely something I try to keep on hand. 

Number 6: Granola
Granola is great because you can easily take it with you on the go. It's delicious dried or with a non dairy milk and fresh fruit for a quick and easy breakfast or snack in between meals. Most granola contains honey and some contain milk. Don't get frustrated just read the labels. A few of the KIND brand granolas are free of honey and dairy. Like I said just read the labels. I'm so used to reading labels that I practically power read them now and It is become second nature to me.

Number 7: Nut Butter & Jelly Sandwich
You might think of nut butter and jelly and think of when you were five years old, but they are super simple, great on the go and filling. I love peanut butter and almond butter. I can eat it by the spoon. Well I should say I do eat it by the spoon. No shame in my love for nut butters. Jelly can be full of added sugar so try to find one that is sweetened naturally by fruit. My husband likes the Polaner All Fruit for that reason. It's only sweetened with natural fruit juice and yay it's Non-GMO. Combine those on whole grain bread and you've got a fast and healthy way to cure your hunger. Again read the labels. You want to avoid the breads with honey and dairy. Also aim for the breads with the least amount of ingredients. A good rule is if you can't pronounce it don't eat it.

Number 8: Annie's Vegan Shells
I recently tried these Vegan Shells and Cream Sauce. They were really good! Processed foods aren't the best, but in a pinch it's not an awful alternative to making your own from scratch. At least it's organic. 

Number 9: Amy's Organics 
Amy's Organics has a ton of Vegan options. They are great for when you don't have a lot of time and they have quality organic ingredients you can feel good about eating. Of course I don't recommend living off any processed foods even if they are organic, but in moderation they are great. One of my favorites is the Roasted Vegetable Pizza. It's great on its own or with a pinch of nutritional yeast and garlic powder. 

Number 10: Gardein Products
Gardein has been the game changer for us. We have recreated so many non vegan dishes with these products. I love the saying "Anything you can eat I can eat Vegan". It's so true. Crispy tenders are delicious by themselves with some dipping sauces, in salads, wraps, pasta dishes and more. The fish less fillets make "fish" tacos that are to die for! They cook up fast and are made with Non-GMO ingredients. My husband and I have tried a ton of meat free products since becoming Vegan, but none compare to Gardein. We also love their beefless sliders, crispy sliders and just about anything they make. If you haven't tried them already you should run to the store now!!!

Sweet Potato Rice Bowl

Sweet Potato Rice Bowl 



•1 large or 2 medium sized sweet potatoes peeled and diced Into bite size pieces 
•1 15oz. can black beans drained and rinsed 
•3 Cups Fresh or frozen broccoli that has been thawed slightly
•2-3 Cups cooked rice (I like brown rice for this recipe)
•Olive oil
•Salt and pepper 

Heat a deep frying pan or cast iron skillet on medium heat. Add a little olive oil to the pan. I usually just eyeball a few splashes. Sauté the sweet potatoes until they are almost fork tender. Be careful not to burn them. Sweet potatoes are easy to burn because of their sugar content. Season with a little S&P. Next add the broccoli and cook to your consistency. Some people like their veggies a little mushy where my husband prefers them to have a little crunch left to them. Once the potatoes and broccoli are to your liking add the beans. Heat through. Add a little more S&P until it's to your liking then stir in the cooked rice. That's it your done! 

A fast and healthy meal in under a half hour. Rice bowls are a big staple in our house. They are simple, filling and extremely versatile. I'll share more of our favorite rice bowls in the future.

Restful Nights

I think at some point in our lives we've all experienced anxiety. Whether it was being slightly nervous before a test or a full blown panic attack, anxiety sucks. I've always dealt with social anxiety, but it has gotten much better over the years. Maybe I've just become accustomed to it or I've grown more confident in myself, I would like to think its the latter. While my social anxiety is more mild than it used to be I still deal with anxiousness at bedtime. It always seems like no matter how tired I am my brain decides to start racing while my stomach turns into knots when my head hits the pillow. I'm sure I'm not the first or the last to ever feel this way. That is why I thought I would share some simple things I have been trying to incorporate before bed so that I can have a successful nights sleep with minimal tossing and turning.


I recently came across the company Timeless Organics Skin Care through Instagram. One of the reasons I love social media is finding new products to love. This company hand makes organic skin care products right in New Jersey, they do not test on animals and they have Vegan products. The first product I bought from them was the Lavender and Vanilla Bed Time Scrub along with one of the Men's Collection products for my husband, but we'll save that for another time. The first night that I used the scrub I was impressed. Not only by how smooth my skin looked and felt, but I felt such a sense of peace and calmness. I am looking forward to trying more of their products in the near future. Be sure to check their website out!



Another thing I have been doing is having a cup of tea before bed. I have tried Celestial Sleepytime tea in the past, but honestly wasn't a fan of the taste. I tried the Vanilla Sleepytime tea a few weeks ago and it's really good. I add a little bit of sugar and a splash of Almond Milk. Taking a hot shower using the bed time scrub, a cup of tea and trying to limit my social media if not unplugging altogether at least an hour before bed has really helped. Now of course I'm not telling you that miracles are going to happen or that you are going to fall asleep the second you hit the pillow. I am just saying it has helped to calm my nerves and i hope it may help you too. If you have any remedies for anxiety and falling asleep please share them with me. I would love to hear what works for you!

*After this blog post a friend of mine told me about Traditional Medicinals Nighty Night Organic Tea. I went out that day and bought it. The taste is better than Celestials Sleepytime Tea and I felt that I only needed one cup of the Nighty Night compared to two cups of the Sleepytime. My Favorite Things: Local Love


I had SO much fun coming up with this blog 
that I'm going to do a "My Favorite Things" post at least once a month!!


This weeks favorite things are actually more like my favorite places. Saugerties New York is full of small town charm and surprising Vegan options. One of the only foods my husband and I found ourselves craving after going Vegan was pizza. 
We actually met and fell in love working at a pizza place when I was 19 and he was 21. Thanks to the amazing owner of Slices of Saugerties our prayers have been answered. They have the best Vegan pizza!!! 



We've also enjoyed their veggie wraps with homemade hummus and they
 have made us Vegan garlic knots (just ask them to leave out
 the cheese). Both my husband and I love the garlic knots! We've also had other pizzas from Slices, 
we just did light sauce, no cheese and lots of veggies. Easy peasy! Not to mention delicious!! Just 
make sure your local pizza place doesn't put any dairy in the dough and you can easily order yourself 
a Vegan pizza or if you're lucky enough to be in the area you must check out Slices of Saugerties!


Most people who know me know I LOVE coffee!! And I'm thrilled that Bluestone Roasting Co. is apart of this town. Not only is the atmosphere inviting and the staff friendly, but they have the best coffee and chai lattes! In my opinion they are better than any other coffee house in our area and surrounding areas (Kingston, Woodstock and Catskill).


I love that the owner remembers me when I come in and will say sweetly to whomever is making my drink that I always get my drinks with non dairy. It's so touching that she remembers little things about her customers. They offer both soy and almond milk for non dairy alternatives. My favorite drink is the chai latte and I've had it with both soy and almond milk and I can tell you it is like 
sipping Heaven from a cup. I love that they offer a customer loyalty card. For every 10 drinks you purchase you get the 11th drink free. I'm so close to my next free drink!! 


They also have added in the last year or two a fresh juice bar where you can choose one of their juice recipes which are full of fun names taken from our area or you can create your own. They do serve food as well and they have a few things on the menu that you could make vegan like an ALT (Avocado Lettuce and Tomato). Unfortunately I'm allergic to avocados (insert sad face here) so I've never tried it. Another must see place if you happen to be in The Hudson Valley!!


Last, but certainly not least and my favorite place in town is Rock Da Casbah. This fun, eclectic place is a farm to table restaurant with delicious Vegan dishes on their menu. Finding this place was like a 
dream come true. I always know that they will have a Vegan dish and dessert on their menu. The first thing I tried was a Red Lentil Burger and Tye-Dye Vegan Cheesecake. Needless to say I was hooked. My sister and I went there for a lunch date recently and I got to try the Fleetwood Mac and Cheese made with cashew sauce. I honestly could not tell the difference between that and the homemade macaroni and cheese I used to make before going Vegan. This restaurant is the newest addition to our area and I hope it stays forever. I will be celebrating my 30th Birthday there in a few weeks with my friends and family and I cannot wait!! If I were you I would take a road trip to our area just to check out this place. Just note they are closed Monday and Tuesday.











Vegan Blueberry Banana Muffins

When I first decided to go Vegan I knew there would be plenty of delicious foods and recipes out there, but I also thought I would have to give up some of our favorite recipes. NOT TRUE! I was pleased to find that by simply swapping out certain ingredients I could make our favorite foods Vegan. This is one of those recipes that I adapted. My husband absolutely loves these muffins and they could not be more simple to make.



Vegan Blueberry Banana Muffins

3 ripened bananas mashed 
3/4 cup pure cane sugar
1/3 cup melted vegan butter (I used Earth Balance)
1 cup ripe blueberries
1 1/2 cups unbleached all purpose flour 
1 tsp baking powder 
1 tsp baking soda 
1/2 tsp kosher or sea salt 
1/2 tsp ground cinnamon 

Preheat oven to 375*F
Line your muffin pan with liners or grease and flour.
In a large bowl mash the bananas. Mix in the sugar. Once combined add the melted butter and blueberries. In a separate bowl whisk together dry ingredients. Add this to the wet mixture and stir until well combined. Spoon batter into muffin pan. This recipe makes 12 regular sized muffins or 6 oversized muffins. Bake 20 minutes for regular sized muffins or 25-30 minutes for oversized.

*If desired sprinkle each muffin with cinnamon and sugar before baking*
