Gluten Free Vegan Cranberry Walnut Energy Balls

Lately I have been feeling as though we need to get into healthier habits. You know less processed foods and more fruits, veggies and other wholesome foods. This is my take on an energy ball. It's full of my favorite ingredients. These are great to make anytime, but I like to make things like this before the week starts so we can eat them during the week when we may be busy or need something on the go. I hope you enjoy this recipe.

Gluten Free Vegan Cranberry Walnut Energy Balls



1/2 Cup Organic dried Cranberries (I used cranberries sweetened with apple juice)
8 Organic dates rolled in coconut (you can use plain dates as well)
2/3 Cup Organic sweetened shredded coconut
1/2 Cup Organic dark chocolate chips 
1/2 Cup Gluten free rolled oats (Non-GMO)
1 Cup Natural Peanut Butter
1/2 Cup Chopped walnuts (Non-GMO)

Makes 36 Balls 

Add all of the ingredients into your food processor and pulse until you have what looks like a thick paste. You will want to stop and scrape the mixture down to ensure you have an even consistency. Once you have the texture you want you can scoop the mixture out and roll it into balls, I like to use a small ice cream scooper so they come out the same size. I like to place the balls on a baking sheet. You can line with parchment paper if you want. Then chill the energy balls for 20 minutes in the fridge before transferring to a container. I find they stick together less when I allow them to chill first. You can store these in an airtight container in your refrigerator for up to two weeks. If your house is anything like mine though, these won't even last a week. I hope you enjoy!!
