Let's Talk About Eggs Baby

Don't mind me and my corny title. And yes I'm singing that in my head. Anyways before we get sidetracked lets get on to the point of this post.

I've always loved baking. It's been a love of mine as far back as I can remember. Some people find baking stressful, but for me it has always been relaxing. After going Vegan I knew I needed to figure out how I was going to make my favorite baked goods if I couldn't use eggs. During my first year into this journey I have tried lots of recipes and different way of substituting eggs in recipes. Some of my favorite go-to egg replacements are: bananas, apple sauce and the corn starch/water method. 2tbs of cornstarch mixed with 3tbs water equals one egg. I use this method when making pumpkin pie because it doesn't have any flavor so the pumpkin pie tasted just like pumpkin pie. I've been interested in trying the flax egg and I've bought flax meal in hopes of trying that out in recipes soon. Here is a chart that I saved soon after going vegan. I've had it saved for so long that I honestly don't remember where I found it.



After baking without eggs for over a year, when I see eggs in recipes now I always think how unnecessary. Not to mention unhealthy. I'm telling you, you do NOT need eggs to make your baked goods moist and delicious! And you do NOT have to be vegan to bake without eggs. Try incorporating some of these methods into your baked goods and you too will see that we do not need to consume eggs. For savory dishes like scrambles and mock egg salad we like to use tofu. Seriously a game changer if you enjoyed these dishes before becoming vegan. 

Just like factory and dairy farming I have learned a lot about the egg industry. Basically I was just as horrified and saddened as I was about factory/dairy farming. I don't want to get into the gruesome details on here.
